Sindhi Biryani Recipe

Ingredients

  • 1/2 cup oil
  • 3 darmiyani piyaz (onion sliced)
  • 1 tbsp adrak lehsan paste (ginger garlic paste)
  • 1/2 kg chicken
  • 8-9 sabut kaali mirch (black pepper corns)
  • 1 badiyan ka phool (star anise)
  • 2 darcheeni (cinnamon sticks)
  • 4-5 long (cloves)
  • 1 bari ilaichi (black cardamom)
  • 4 hari ilaichi (green cardamom)
  • 1 tsp zeera (cumin seeds)
  • 1-1/2 tsp pissi laal mirch (red chili powder)
  • 1/2 tsp haldi (turmeric)
  • 1 tsp garam masala powder
  • 1 tsp pissa zeera (cumin powder)
  • 1 tsp pissa dhania (coriander powder)
  • 1-1/2 tsp namak (salt)
  • 1 tezpata (bay leaf)
  • 3/4 cup dahi (yogurt)
  • 3 tamatar (tomato cubes)
  • 4-5 hari mirch (green chili)
  • 5-6 aalu bukhara (plums)
  • Handful hara dhania (coriander leaves)
  • Handful podina (mint leaves)
  • 2 tbsp lemon juice
  • 1/2 kg basmati chawal (rice soaked & boiled with whole spice & salt)
  • 2-3 ubaly aalu (potatoes boiled)
  • Talli hoi piyaz (onion fried)
  • 2 tbsp lemon juice
  • Remaining cooked rice
  • 1-2 tbsp pani (water)
  • 1/2 tsp zarday ka rang (yellow food color)
  • Talli piyaz (fried onion)
  • 1 tbsp oil

Directions

Pan main oil or piyaz golden brown honay tak fry karlen_
Adhay piyaz bahar nikaal kar side par rakh den_
Baki talli piyaz main adrak lehsan ka paste daal kar achi tarah mix karen_
Chicken shamil karen or chicken ka rang tabdeel honay tak fry karen_

Sabut kaali mirch, badiyan ka phool, darcheeni, long, bari ilaichi, hari ilaichi, zeera, laal mirch powder, haldi, garam masala, zeera powder, dhania powder, namak, tezpata or dahi daal kar achi tarah mix karen or 4-5 mins ke liye paka len_

Tamatar daal kar achi tarah mix karen_
Hari mirchen, aalu bukhara, hara dhania or podina daal kar achi tarah mix karen_
Dhak kar 6-8 mins ke liye paka len_

Cooked rice & gravy ki adhi quantity ko bahar nikaal kar rakh den_
Lemon juice, cooked rice, ublay aalu, remaining cooked chicken, talli piyaz, lemon juice, baki bache hue cooked chawal, pani, zarday ka rang, talli piyaz or aalu daal kar 10 mins ke liye steam cook karlen_
