Kachori With Aalu Ki Tarkari Recipe

Ingredients

  • 2 cups maida (flour)
  • Hasb e zaeqa namak (salt to taste)
  • 1/4 cup tail (oil)
  • 1/2 cup pani (water)
  • 1/2 cup mong daal (yellow lentil boiled & grinded)
  • 1 hari mirch (green chili chopped)
  • 1/2 tsp saunf (fennel crushed)
  • 1/2 tsp laal mirch (red chili powder)
  • 1/4 tsp garam masala
  • 1/2 tsp zeera (cumin powder)
  • 2 tbsp hara dhania (coriander leaves chopped)
  • 1/2 tsp lehsan powder (garlic powder)
  • 1 tsp namak (salt)

Ingredients for aalu ki tarkari

  • 4-5 aalu (potatoes boiled & slightly mash)
  • 1/2 tsp rayi dana (mustard seeds)
  • 1/2 tsp kalonji (nigella sativa)
  • 1 tbsp kuti laal mirch (red chili flakes)
  • Hasb e zaeqa namak (salt to taste)
  • 2 chutki zarde ka rang (yellow food color 2 pinch)
  • 1-2 tbsp gajar ka achar (carrot pickle)

Directions

Pehle maida, namak or tail ko goondh len_

Ab pani shamil karke naram aatta goondh len_
Ab dhak kar 15 minutes chor den_
Ab dubara goondhen_
Phir ek bowl main moong daal, hari mirch, saunf, laal mirch, garam masala, zeera powder, hara dhania, lehsan powder or namak shamil karke achi tarah mix karlen_
Ab aatay mese chota pera banae_
Phir uske bech main mong daal kar mixture rakh kar pera band karlen_
Ab peray ko thora sa bell kar halki anch par deep fry karen_
Tayar hone par nikaal len_
Ab ek degchi main aalu bowl karen_
Phir halke mesh karlen_
Ab pan main oil daalen_
Oil main rayi dana, kalonji,laal mirch or namak daal kar mix karen_
Ab ublay halke mesh kiye hue aalu daalen pani ke sath jisme bowl hue thy_
Ab zarday ka rang shamil karke mix karen_
Iske baad gajar ka achar daal ke mix karen_
Ab dish main nikaal len or kachori ke sath serve karen_:)
