Ingredients
- 1/2 tsp saunf (fennel seeds)
- 1 tsp zeera (cumin seeds)
- 1 tez paat (bay leaf)
- 1 javitri (mace)
- 2 laung (cloves)
- 1/2 cup oil
- 1/2 tsp rai dana (mustard seeds)
- 1/2 tsp zeera (cumin seeds)
- 1 cup piyaz (onion grinded)
- 1-1/2 tsp adrak lehsan (ginger garlic paste)
- 1 cup tamatar (tomato pureed)
- 1 tsp kashmiri laal mirchi
- 1 tsp namak (salt)
- 1 tsp dhania (coriander seeds roasted & crushed)
- 1 tsp haldi (turmeric)
- 1 tsp laal mirch powder (red chili powder)
- 2-3 tbsp pani (water)
- 500 ublay chane 1 tsp namak main (boiled chickpeas)
- 1 cup left over water from boiled chick peas
Ingredients for baturay
- 2 cups maida (flour)
- 1/3 cup suji (semolina)
- 1 tsp cheeni (sugar powdered)
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp namak (salt)
- 1/4 cup dahi (yogurt)
- 1/2 cup pani (water)
Directions
Pehle ek pan main saunf, zeera, tezpaat, javitri or laung ko bhun kar grinder main grind karke powder bana kar ek taraf rakh den_
Ab degchi main oil daalen_
Phir rayi dana or zeera daal kar bhune_
Ab piyaz ka paste shamil karke 3-4 pakne den_
Ab adrak lehsan ka paste or tamatar ka paste shamil karke 2 minutes pakaen_
Phir kashmiri laal mirchi,namak, dhania, haldi or grind kia hua masalal or aal mirch powder shamil karke mix karen_
Ab pani daal kar pakaen_
Phir ublay chane shamil karke mix karen_
Ab chano wala ubla hua pani daal kar 6-8 minutes dhakan dhak kar ubalne den_
Ab dhakan hata kar mix karke chulah band karlen or ek taraf rakh den_
Ab Baturay banane ke liye maida, suji, cheeni, baking powder, baking soda or namak shamil karke mix karen_
Ab dahi daal kar mix karen_
Ab pani se naram aata goondh len_
Phir cover karke 1-2 ghantay chor den_
Ab tail se grease kiye hue hathon se chota pera banae_
Ab usko thora bell len_
Iske baad isko golden brown hone tak deep fry karen_
Ab baturay tail mese nikaal ke cholo ke sath serve karen_:)
