Karhi Chaat Recipe

Ingredients

  • 1 cup baisan (gram flour sifted)
  • 2 cups pani (water)
  • 2 cups dahi (yogurt whisked)
  • 1 tsp adrak lehsan paste (ginger garlic paste)
  • 1 tsp namak (salt)
  • 1-1/2 tsp dhania (coriander seeds roasted & crushed)
  • 1-1/2 tsp laal mirch powder (red chili powder)
  • 1/2 tsp haldi powder (turmeric powder)
  • 3 cups pani (water)

Ingredients for tarka

  • 1/2 cup tail (oil)
  • 1 piyaz (onion sliced)
  • 3 jave lwhsan (garlic cloves sliced)
  • 4-5 sabut laal mirch (whole red chilies)
  • 1/2 tsp zeera (cumin seeds)
  • 7-8 curry pata (curry leaves)

Ingredients for khatti meethi chatney (sweet & sour sauce)

  • 2 cups pani (water)
  • 1/2 cup imli (tamarind)
  • 1/2 cup gurr (jaggery)
  • 1/2 tsp kaali mirch (black pepper crushed)
  • 1/4 tsp namak (salt)
  • 1 tsp laal mirch powder (red chili powder)
  • 1/2 tsp zeera (cumin seeds crushed)
  • 1/2 tsp sonf (fennel seeds crushed)
  • 3-4 tbsp cheeni (sugar)
  • 1 tsp kaala namak (black salt)
  • 1 tukra darcheeni (cinnamon stick)
  • 2 long (cloves)
  • 1/2 inch adrak (ginger grated)

Ingredients for assembling

  • Chanay (boiled chickpeas)
  • Aalu (potatoes boiled & cubes)
  • Chaat masala
  • Pyaz (onion sliced)
  • Nimbu ka rass (lemon juice)
  • Hara dhania (fresh coriander chopped)
  • Hari mirch (green chili chopped)
  • Mix nimko

Directions

Karhi banane ke liye pan main baisan daal den or khushbu aany tak roast karlen_

Pani daal den or smooth hone tak musalsal whisk karlen_
Pheeti hoi dahi daal den or musalsal whisk karte rahen_
Adrak lehsan paste, namak, dhania, laal mirch powder, zeera or jaldo powder daal kar achi tarah mix karlen_
Pani daal kar achi tarah mix karen or ubaal any den or bech bech main chamcha chalatay rahen_
Dhak kar halki anch par 40-45 mins ya garha honay tak paka len or bech bech main chamach chalatay rahen_

Tarka banane ke liye chotay frying pan main oil or piyaz daal kar mix karlen_
Lehsan daal den or holden honay tak fry karlen_
Sabut laal mirch, zeera or curry pata daal kar achi tarah mix karen or golden brown hone tak fry karlen_
Tarka ko karhi ke upar daal den or achi tarah mix karlen_

Khatti meethi Chatney banane ke liye sauce pan main pani, imli, gur, kaali mirch crushed, namak, laal mirch powder, zeera, sonf, cheeni, kaala namak, darcheeni or long daal kar achi tarah mix karlen, dhak kar sauce garha hone tak paka len (20-25 mins) or chamach chalatay rahen_
Adrak daal kar mix karlen or 2-3 mins ke liye halki anch par paka len, strain karke thanda karlen_
Chatney ko 1-2 months ke liye refrigerate main store kar sakte hen_

Assembling ke liye serving plate main chanay, aalu, chaat masala, karhi, khatti meethi chatney, piyaz, lemon juice, hara dhania, hari mirch, chaat masala, mix nimko or khatti meethi chatney daal kar serve karen_:)
