Ingredients

  • 6 karelay (bitter gourds)
  • 4 bareek kati piyaz (onion finely chopped)
  • 4 bareek kati hari mirchen (green chili finely chopped)
  • 2 bareek kati carry (raw mango finely chopped)
  • 10 karri patay (curry leaves)
  • 2 tsp pissi haldi (turmeric powder)
  • 1 tsp kalonji (onion seeds)
  • 1 tbsp pissi laal mirch (red chili powder)
  • 1 tbsp pissa adrak lehsan (ginger garlic paste)
  • 1-1/2 tbsp pissa gurr (jaggery powder)
  • 1/2 tsp sonf (fennels seeds)
  • Hasb e zaeqa namak (salt to taste)
  • 1-1/2 cup tail (oil)

Directions

Karelo ko cheel kar cheera lagaen or beej nikaal kar mehfuz karlen_
Inhe dhoye bghari adhi haldi, gurr or namak laga kar 20 mins ke liye rakhen, phir dho len_
Degchi main tail garam karke piyaz halki brown karlen_
Isme baki haldi, laal mirch, carry, kalonji, lehsan adrak or namak mila kar bhune or chulah band karden_
Jab aameza thanda hojaye to isse karelo main bharen or dhagy se bandh len_
Jo aameza bach jaye usse mehfuz karlen_
Frying pan main adha cup tail garam karen or karele fry karke baki bacha hua aameza, gurr, hari mirchen, curry patay, karele ke beej or namak daalen, phir dum par rakh den_
Tayar hone pe dish main nikaal kar serve karen_:)
