Lemon rice with loki ka (bottle gourd) raita Recipe

Ingredients

  • 4 tbsp oil
  • 1 darmiyani piyaz sliced (1 medium onion sliced)
  • 1 tsp rayi dana (mustard seeds)
  • 6-8 sabut laal mirch (button red chili)
  • 1 tsp haldi powder (turmeric powder)
  • 1/4  cup namkeen mong phali (salted peanuts)
  • 2-1/2 cups chawal (rice cooked)
  • 1 tsp namak (salt)
  • 2-3 tbsp khopra (coconut desiccated)
  • 3 tbsp kata podina (mint leaves chopped)
  • Handful karri pata (curry leaves)
  • 3 hari mirch (green chili)
  • 2-3 tbsp nimbu ka rass (lemon juice)
  • 1 tsp lemon zest
  • 2-3 tbsp pani (water)

Ingredients for loki ka raita

  • 3/4 cups loki (bottle gourd peeled & shredded)
  • 1/4 cup loki ka pani (loki water reserve)
  • 2 cups garhi dahi (yogurt thick)
  • 1/2 tsp namak (salt)
  • 1 tsp chaat masala
  • 2 tbsp kata hara dhania (coriander leaves chopped)
  • 2 tsp pissa lehsan (garlic paste)
  • 1/4 cup Bottle gourd water 
  • 1-2 tbsp oil
  • 1 tsp zeera (cumin seeds)
  • 2 kati hari mirch (green chili chopped)
  • 3-4 sabut laal mirch (button red chili)

Directions

Degchi main oil or piyaz daal kar naram honay tak fry karlen_

Rai dana, sabut laal mirch, haldi powder or mong phali 1-2 mins ke liye fry karen_
Cooked rice or namak daal kar achi tarah mix karen_
Khopra, podina, hari mirch, karri pata, nimbu ka rass or lemon zest daal kar mix karlen_
Pani daal kar dhak kar 8-10 mins ke liye halki anch par dum par rakh den_

Sauce pan main pani or peeled & shredded loki daal kar boil karen_
Chaan kar 1/4 cup loki ka pani nikaal kar side par rakh den_
Bowl main dahi, namak, chaat masala, hara dhania, pissa lehsan or boil loki ka pani daal kar achi tarah mix karen_
Frying pan main oil, zeera, hari mirch or sabut laal mirch daal kar 1 min ke liye saute karlen_
Ab tarkay ko dahi mixture ke upar daal kar mix karen_
Loki k Raita tayar hai_
