Ingredients
- 500 gm / 1/2 kg gol baingan (big one)
- 1/2 cup tail (oil)
- 1-1/2 cups piyaz sliced (onion sliced)
- 1 darmiyani kata tamatar (1 meidum tomatoes chopped)
- 1-1/2 tsp namak (salt)
- 2 tsp laal mirch (red chili)
- 1/2 tsp haldi (turmeric)
- 1 tsp zeera (cumin seeds)
- 4-6 hari mirch (green chili)
- 1/4 cup taza dhania (fresh coriander)
- 2 tsp adrak lehsan paste (ginger garlic paste)
Directions
Dhulay or sukhe baingan ko stove ki anch par rakh kar senk len_
Yhan tak uska chilka jal jaye_
Uske baad uska chilka nikaal den or baingan ko kante ki madad se mash karlen or side par rakh den_
Ab ek pan main oil shamil karen isme zeera daal ke kar karaye phir piyaz, adrak lehsan paste or 2 hari mirch daal ke piyaz ka rang halka sunehra honay tak pakaen_isme tamatar shamil karen_
Jab bilkul halka pani reh jaye to isme masale shamil karen or phir baingan shamil karke achi tarah mix karen_
Jab tail kinaray chor de to isme baki hari mirch or taza dhania shamil karke 2-3 mins ke liye dum par rakh den_
